Creamy No-Churn Mixed Berry Ice Cream Cups
This easy, no-churn mixed berry ice cream is the ultimate refreshing summer treat. Made with a rich, creamy base and packed with a vibrant, sweet-tart homemade berry swirl, it requires absolutely no ice cream maker. Serving them in individual cups makes them perfect for parties, kids, or effortless portion control!

Ingredients
For the Berry Swirl:
- 2 cups fresh or frozen mixed berries (strawberries, raspberries, blackberries, and blueberries)
- 3 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
For the Ice Cream Base:
- 2 cups (16 oz) heavy whipping cream, cold
- 1 can (14 oz) sweetened condensed milk, chilled
- 1 teaspoon pure vanilla extract
Instructions
Step 1: Make the Berry Compote
- In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice.
- Cook over medium heat for 8–10 minutes, stirring occasionally, until the berries break down and the mixture thickens into a jam-like consistency.
- Remove from heat and let it cool completely. For a faster chill, place it in the refrigerator for 20 minutes.
Step 2: Whip the Cream
- In a large chilled bowl, pour in the cold heavy whipping cream.
- Using a hand mixer or stand mixer fitted with a whisk attachment, whip the cream on medium-high speed until stiff peaks开启 (it should hold its shape perfectly).
Step 3: Combine the Base
- Gently fold the chilled sweetened condensed milk and vanilla extract into the whipped cream using a rubber spatula.
- Mix slowly just until fully combined, being careful not to deflate the fluffy whipped cream.

- Add the cooled berry compote into the ice cream base.
- Gently fold it 2 or 3 times to create beautiful, distinct pink and deep-red berry ribbons throughout the mixture (do not overmix, or it will turn entirely pink!).

Step 5: Freeze and Serve
