Golden Flaky Flatbread (Moroccan Msemen Style)

Description

Experience the ultimate comfort food with these golden, multi-layered flatbreads. Known for their unique “flaky” texture, these breads are crispy on the outside and soft, buttery on the inside. Perfect for breakfast or afternoon tea, they are traditionally served warm with a drizzle of honey and a knob of melted butter.


Ingredients

  • 3 cups All-purpose flour.
  • 1 cup Fine semolina (Smida rqiqa).
  • 1 teaspoon Sugar.
  • 1 teaspoon Salt.
  • 1 ½ cups Warm water (as needed for a soft dough).
  • ½ cup Melted butter mixed with vegetable oil (for folding).
  • Extra semolina (for sprinkling between layers).

Instructions

Serve: Enjoy hot with honey, jam, or cheese!

Knead the Dough: Mix flour, semolina, sugar, and salt. Gradually add warm water and knead until the dough is smooth and elastic.

Rest: Divide the dough into small equal balls, coat them with oil, and let them rest for at least 20 minutes.

Flatten & Fold: On an oiled surface, flatten a dough ball until it’s paper-thin. Brush with the butter-oil mixture and sprinkle a bit of semolina. Fold it into a square or roll it to create those beautiful layers.

Cook: Flatten the folded square slightly and cook on a hot non-stick skillet or “Farrah” until both sides are golden brown and spotted.
