Cheesy One-Pot Cheeseburger Macaroni Soup

This recipe is a classic American comfort food staple. It’s essentially a “cheeseburger in a bowl,” combining the hearty flavors of ground beef and sharp cheddar with tender macaroni pasta. It’s perfect for a quick weeknight dinner that the whole family will love.


Ingredients

  • 1 lb Ground beef (lean)
  • 1 Medium yellow onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef broth (low sodium preferred)
  • 1 can (15 oz) Tomato sauce
  • 2 cups Elbow macaroni (uncooked)
  • 1 tsp Yellow mustard
  • 1 tsp Smoked paprika
  • 1/2 tsp Onion powder
  • 2 cups Sharp Cheddar cheese, shredded
  • 1/2 cup Heavy cream
  • Salt and black pepper to taste
  • Fresh parsley or green onions for garnish

Instructions

  1. Brown the Beef: In a large pot or Dutch oven over medium-high heat, cook the ground beef and diced onions until the beef is fully browned. Drain any excess grease.
  2. Season: Add the minced garlic, smoked paprika, onion powder, salt, and pepper. Sauté for about 1 minute until fragrant.
  3. Simmer: Stir in the beef broth, tomato sauce, and yellow mustard. Bring the mixture to a gentle boil.
  4. Cook Pasta: Add the uncooked elbow macaroni. Reduce heat to medium-low and simmer, stirring occasionally, for 8–10 minutes or until the pasta is tender.
  5. Make it Creamy: Turn the heat to low. Stir in the heavy cream and the shredded cheddar cheese. Continue stirring until the cheese is completely melted and the soup is silky and “creamy.”
  6. Serve: Ladle into bowls. Garnish with fresh parsley or extra cheese if desired.
