This recipe is a classic American comfort food staple. It’s essentially a “cheeseburger in a bowl,” combining the hearty flavors of ground beef and sharp cheddar with tender macaroni pasta. It’s perfect for a quick weeknight dinner that the whole family will love.
Ingredients
- 1 lb Ground beef (lean)
- 1 Medium yellow onion, diced
- 2 cloves Garlic, minced
- 4 cups Beef broth (low sodium preferred)
- 1 can (15 oz) Tomato sauce
- 2 cups Elbow macaroni (uncooked)
- 1 tsp Yellow mustard
- 1 tsp Smoked paprika
- 1/2 tsp Onion powder
- 2 cups Sharp Cheddar cheese, shredded
- 1/2 cup Heavy cream
- Salt and black pepper to taste
- Fresh parsley or green onions for garnish
Instructions
- Brown the Beef: In a large pot or Dutch oven over medium-high heat, cook the ground beef and diced onions until the beef is fully browned. Drain any excess grease.
- Season: Add the minced garlic, smoked paprika, onion powder, salt, and pepper. Sauté for about 1 minute until fragrant.
- Simmer: Stir in the beef broth, tomato sauce, and yellow mustard. Bring the mixture to a gentle boil.
- Cook Pasta: Add the uncooked elbow macaroni. Reduce heat to medium-low and simmer, stirring occasionally, for 8–10 minutes or until the pasta is tender.
- Make it Creamy: Turn the heat to low. Stir in the heavy cream and the shredded cheddar cheese. Continue stirring until the cheese is completely melted and the soup is silky and “creamy.”
- Serve: Ladle into bowls. Garnish with fresh parsley or extra cheese if desired.
