Moist Chocolate Berry Layer Cake
This cake looks elegant but is tricky for many home bakers. The secret to a perfect slice is balance: soft sponge, light cream, and fresh fruit that shines without sinking.
Ingredients
All-purpose flour
Cocoa powder
Granulated sugar
Eggs
Butter
Milk
Heavy whipping cream
Powdered sugar
Fresh strawberries
Dark chocolate
Heavy cream (for ganache)
Method

  1. Bake the sponge layers
    Prepare two thin chocolate cake layers. Bake until just set, then let them cool completely.
  2. Whip the cream
    Beat the heavy cream with powdered sugar until soft peaks form. Keep it light for easy layering.
  3. Assemble the cake
    Place one cake layer on a serving plate. Spread a layer of whipped cream and arrange sliced strawberries on top. Add the second cake layer and repeat lightly.
  4. Make the chocolate topping
    Heat heavy cream until warm and pour over chopped dark chocolate. Stir until smooth and pour over the top of the cake.
  5. Chill and serve
    Refrigerate the cake for at least an hour. Slice gently for clean, beautiful layers.
