Ingredients

  • 8-10 Chicken drumsticks.
  • 1 cup Hot sauce (like Cholula or Frank’s RedHot).
  • 2 cups All-purpose flour.
  • 2 tbsp Creole or Cajun seasoning (Tony Chachere’s style).
  • 1 tbsp Garlic powder.
  • 1 tbsp Onion powder.
  • 1 tsp Cayenne pepper (optional for extra heat).
  • Salt and black pepper to taste.
  • Vegetable oil for frying.

Instructions

  1. The Marinade: In a large bowl, soak the chicken drumsticks in the hot sauce. Let them sit for at least 30 minutes (or up to 4 hours in the fridge) so the flavor gets deep into the meat.
  2. The Coating: In another bowl, mix the flour with all the dry spices (Creole seasoning, garlic powder, onion powder, etc.).
  3. Dredging: Take each drumstick from the sauce and roll it in the flour mixture. Press the flour firmly onto the chicken to create those extra crispy crags.
  4. Frying: Heat oil in a deep skillet or pot to 350°F (175°C). Fry the chicken in batches for about 12-15 minutes, turning occasionally until they are deep golden brown and cooked through.
  5. Drain: Let the chicken rest on a wire rack or paper towels to stay crispy.
