🛒 Ingredients
For the Chicken:
- 6-8 Bone-in, skin-on chicken thighs
- 2 tbsp Olive oil or melted butter
- 1 tbsp Fresh parsley (finely chopped)
The Signature Rub:
- 1 tbsp Garlic powder (or 4 cloves minced garlic)
- 1 tsp Onion powder
- 1 tsp Dried oregano or thyme
- 1 tsp Smoked paprika (for that deep golden color)
- 1/2 tsp Salt & 1/2 tsp Black pepper
- A pinch of Red pepper flakes (optional, for a hint of heat)
👨🍳 Instructions
- Prep: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or a rimmed baking sheet.
- Dry the Skin: Pat the chicken thighs dry with paper towels. (This is the secret to getting that extra crispy skin!).
- Season: In a small bowl, mix all the rub ingredients together. Coat the chicken thighs thoroughly with olive oil, then rub the spice mixture all over each piece (including under the skin).
- Arrange: Place the thighs in the baking dish, skin-side up.
- Roast: Bake for 35-45 minutes until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Rest & Serve: Let the chicken rest for 5 minutes before serving to keep the juices inside. Garnish with fresh parsley.
