Crispy Potato Cheese Bites
Description
These golden, crispy Potato Cheese Bites are the ultimate comfort snack. Made with smooth, mashed potatoes mixed with fresh herbs and plenty of melting cheese, they are pan-fried until perfectly crisp on the outside and gooey and soft on the inside. Whether you’re serving them as a side dish, a party snack, or a quick dinner, they are guaranteed to disappear from the plate in minutes!
Ingredients
- Potatoes: 4-5 medium potatoes, peeled and boiled until tender.
- Cheese: 1 cup shredded mozzarella or cheddar (or a mix for the best “cheese pull”).
- Binding: 1/2 cup flour (plus extra for dusting) and 1 egg.
- Herbs & Flavor: 1/4 cup fresh parsley or green onions (finely chopped), 1/2 tsp garlic powder, salt, and black pepper to taste.
- Frying: Vegetable oil for shallow frying.
Instructions
- Mash: While the potatoes are still warm, mash them thoroughly until smooth with no lumps. Let them cool slightly.
- Mix: Add the egg, flour, chopped herbs, garlic powder, salt, and pepper to the mashed potatoes. Mix well until a soft, pliable dough forms.
- Add Cheese: Take a small amount of the potato mixture, flatten it in your hand, add a little bit of shredded cheese in the center, and fold the edges to seal it into a small ball or disc shape.
- Shape: Place the finished discs on a tray (as shown in the top picture).
- Fry: Heat oil in a pan over medium heat. Fry the potato bites for 3–4 minutes on each side until they are golden brown and crispy.
- Serve: Remove from the pan, let them drain on a paper towel, and serve warm while the cheese is still melty!
Pro-Tips for Success
Serving: These are delicious served with a side of garlic yogurt dip, spicy mayo, or a simple marinara sauce
Consistency: If the potato dough feels too sticky, add a little more flour, but don’t add too much or they will become dense.
Perfect Crust: Make sure the oil is hot enough before adding the bites, otherwise they will absorb too much oil.
Customization: You can add chili flakes to the dough if you like a spicy kick, or mix in some grated Parmesan for extra depth.
