Ingredients

  • 3 large chicken breasts, sliced in half lengthwise to make cutlets

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional, for a little heat)
  • Fresh basil leaves, chopped (for garnish)

Instructions

  1. Prep the Chicken: Season both sides of the chicken cutlets evenly with salt and black pepper.
  2. Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side, until golden brown and fully cooked through. Remove the chicken from the skillet and transfer to a plate.
  3. Sauté the Garlic: In the same skillet, lower the heat to medium. Add the minced garlic and cook for about 1 minute until fragrant, making sure it doesn’t burn.
  4. Make the Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any delicious browned bits from the bottom of the pan. Stir in the heavy cream and grated Parmesan cheese, letting it simmer for 2 to 3 minutes until the sauce begins to thicken.
  5. Add the Flavors: Stir in the chopped sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes.
  6. Combine and Serve: Return the cooked chicken (and any resting juices) back into the skillet. Spoon the creamy sauce over the chicken and let it simmer for another 2 minutes until everything is heated through.
  7. Garnish: Remove from heat, top with fresh chopped basil, and serve immediately!
