Ingredients

  • 4-5 Large potatoes (Russet potatoes are best for fries).
  • 1 Large egg.
  • 2 tbsp Cornstarch (bach tkhaliha tched f l-ferite).
  • 1 tsp Paprika (for that golden color).
  • 1/2 tsp Garlic powder.
  • Salt and black pepper to taste.
  • Vegetable oil for deep frying.
  • Fresh parsley (optional garnish).

Instructions

  1. Prep the Potatoes: Peel and cut your potatoes into even sticks. Soak them in cold water for 20 minutes to remove excess starch, then dry them completely with a towel.
  2. The Egg Wash: In a large bowl, whisk the egg with paprika, garlic powder, salt, and pepper.
  3. The Coating: Toss the dried potato sticks into the egg mixture until well coated. Sprinkle the cornstarch over them and toss again until everything is evenly light and sticky.
  4. The First Fry: Heat oil to 325°F (160°C). Fry the potatoes in batches for about 5 minutes (they shouldn’t be brown yet). Remove and drain.
  5. The Final Crunch: Increase the heat to 375°F (190°C). Fry them again for 2-3 minutes until they turn deep golden brown and super crispy.
  6. Season: Sprinkle a little more salt and parsley while they are still hot.
