For the Chicken:

  • 6-8 Bone-in, skin-on chicken thighs
  • 2 tbsp Olive oil or melted butter
  • 1 tbsp Fresh parsley (finely chopped)

The Signature Rub:

  • 1 tbsp Garlic powder (or 4 cloves minced garlic)
  • 1 tsp Onion powder
  • 1 tsp Dried oregano or thyme
  • 1 tsp Smoked paprika (for that deep golden color)
  • 1/2 tsp Salt & 1/2 tsp Black pepper
  • A pinch of Red pepper flakes (optional, for a hint of heat)

  1. Prep: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or a rimmed baking sheet.
