Salmon Nourish Bowl with Roasted Squash & Goat Cheese
A vibrant and satisfying bowl combining tender salmon with sweet roasted butternut squash, creamy goat cheese, and a mix of fresh and crunchy toppings. Balanced, nourishing, and perfect for a wholesome lunch or dinner.
Ingredients
1 cooked salmon fillet (oven-baked or pan-seared)
1 cup mixed leafy greens (spinach, arugula, or similar)
½ cup roasted butternut squash cubes
2 tablespoons goat cheese, crumbled
2 tablespoons dried cranberries
2 tablespoons pumpkin seeds (pepitas)
¼ cup raw shredded beetroot
¼ cup fresh blueberries
Olive oil, salt, and black pepper
Optional dressing: balsamic reduction or lemon-based vinaigrette
Instructions
- Prepare the salmon
Brush the salmon lightly with olive oil and season with salt and pepper. Bake in a preheated oven at 400°F (200°C) for 12–15 minutes, or cook in a skillet over medium heat for 4–5 minutes per side until flaky and cooked through. - Roast the squash
Toss the butternut squash with olive oil, salt, and pepper. Roast at 400°F (200°C) for about 25 minutes, turning once, until soft and lightly caramelized. - Build the bowl
Start with a base of mixed greens in a wide bowl. Arrange the salmon, roasted squash, goat cheese, cranberries, pumpkin seeds, blueberries, and shredded beets on top. - Finish and serve
Drizzle with olive oil or your choice of dressing. Serve immediately, warm or chilled.
